Drinking beet juice , a substance rich in natural nitrates, increases blood flow to the brain. The researchers dived a group of adults ages 67¬† year to 81 years into two groups. One group consumed a high nitrate diet in which the nitrate was beet juice, while the other group consumed a low nitrate diet. They evaluated blood flow in the participant’s brain via magnetic resonance imaging and found increased flow in the frontal lobe, an area in which degeneration is commonly seen in dementia and other cognitive disorders.
